Creamy Spaghetti with Mushrooms, Truffles and Bacon

Ingredients

Pasta & Proteins:

  • 200g spaghetti (or linguine)
  • 200g bacon, chopped (thick-cut recommended)
  • 2 tablespoons olive oil or butter

  • 250g mushrooms, sliced (cremini or button)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped

Sauce & Finishing:

  • 100g Minced Black Truffle in Extra Virgin Olive Oil
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese (plus extra for serving)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Ingredient Notes

• Reserve 1/2 cup pasta water to adjust sauce consistency
• Pancetta can substitute for bacon
• Add 1/4 cup white wine with cream for extra depth
• Freshly grated Parmesan melts more smoothly

Instructions

  1. Step 1: Boil the spaghetti: In large pot of salted boiling water, cook spaghetti 1 minute less than package directs for al dente. Reserve 1/2 cup pasta water, then drain.
  2. Step 2: Cook the bacon: Heat oil in large skillet over medium heat. Add bacon and cook until crispy (5-6 min). Transfer to paper towels, leaving drippings in pan.
  3. Step 3: Sauté vegetables: In same skillet, cook onion until soft (3 min). Add garlic for 30 seconds until fragrant. Increase heat to medium-high, add mushrooms and cook until golden (5-6 min).
  4. Step 4: Make sauce: Reduce heat to medium. Add cream and simmer 2-3 minutes until slightly thickened. Stir in Parmesan until melted. Mix in 4-5 tablespoons truffle oil.
  5. Step 5: Combine: Add cooked spaghetti and bacon to skillet. Toss to coat, adding reserved pasta water 1 tbsp at a time if needed. Season with salt and pepper.
  6. Step 6: Serve: Garnish with parsley and extra Parmesan. Serve immediately with garlic bread or salad.

• Cook pasta just until al dente - it will finish cooking in sauce
• Use kitchen scissors to easily chop bacon
• Let sauce rest 2 minutes off heat before serving for ideal consistency
